Chicken-Spinach Stack

2 tablespoons mayonnaise
2 tablespoons plain nonfat yogurt
2 tablespoons Major Grey's mango chutney
4 slices reduced-calorie Italian bread
6 cups lightly packed spinach leaves
2 tablespoons dry white wine
1 tablespoon unsalted margarine
6 ounces Healthy Ones™ Skinless Chicken Breast


Preheat broiler. Combine mayonnaise, yogurt and chutney in small bowl. Place bread on baking sheet. Toast one side only under broiler, 4 inches from heat source. Turn bread over and spread 1-1/2 tablespoons of the mayonnaise mixture on untoasted side. Broil until bubbly; set aside.

Rinse spinach with water and shake off excess water. Cook and toss spinach in nonstick skillet over medium heat until wilted, about 1 minute. Divide spinach and place on bread. Heat wine and margarine in same skillet. Add chicken and heat about 1 minute or until hot. Arrange chicken on spinach. Serve immediately.
