Ham Salad Pepper Cups

4 yellow bell peppers
1/4 cup nonfat plain yogurt
1 tablespoon grated Parmesan cheese
1/2 teaspoon lemon juice
1/4 teaspoon dried basil leaves
1/8 teaspoon garlic powder
1/8 teaspoon ground black pepper
1/2 pound Healthy Ones™ Deli Cooked Ham, sliced 1/4 inch thick
3/4 cup frozen peas, thawed
1/2 cup sliced fresh mushrooms
3 tablespoons sliced green onions


To prepare pepper cups, cut off tops and remove seeds and membrane. Blanch peppers until crisp-tender in boiling water. Or, place peppers cut side down on microwave-safe tray; add 1/2 cup water and microwave on 100% power for 4 minutes or until crisp-tender. Rinse peppers with cold water and drain well.

For dressing, combine yogurt, cheese, lemon juice, basil, garlic powder and pepper in small bowl. Cut ham into 1/4-inch cubes. Stir together ham, peas, mushrooms, onions and dressing in medium bowl. Divide ham mixture between pepper cups.
