Sweet and Sour Turkey

1 can (20 ounces) pineapple chunks in unsweetened juice 1 can (6 ounces) pineapple juice (3/4 cup)
1/4 cup packed brown sugar
3 tablespoons cornstarch
1/4 cup white vinegar
2 tablespoons catsup
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
1 pound Healthy Ones™ Honey Roasted Turkey Breast, cut into 1/2-inch cubes
1 medium green bell pepper, cut into strips
1 tomato, cut into wedges
6 cups hot cooked rice (cooked without salt)


Drain pineapple, reserving juice. Combine reserved juice, pineapple juice, brown sugar, cornstarch, vinegar, catsup, cinnamon and salt in large saucepan. Cook and stir over medium heat until thickened. Stir in turkey, pineapple, green pepper and tomato. Heat until hot. Serve over rice.
