Beef, Barley & Mushroom Soup

1 tablespoon canola or olive oil
1/2 cup sliced shallots or chopped onion
1 (4 ounce) package sliced mixed exotic mushrooms or 2 cups sliced crimini or button mushrooms
4 cups low salt beef or chicken broth
1/2 cup quick cooking barley
1/2 cup very thinly sliced carrots or packaged matchstick-cut carrots
1/2 teaspoon dried thyme leaves
1/4 teaspoon salt (optional)
1/4 teaspoon freshly ground black pepper
8 ounces Healthy Ones™ Deli Roast Beef, cut 1/2-inch thick (1 slice), cut into cubes (1-1/2 cups)


Heat oil in a large saucepan over medium-high heat. Add shallots; cook 2 minutes, stirring occasionally. Stir in mushrooms; cook 5 minutes, stirring occasionally. Stir in broth, barley, carrots, thyme, salt if desired and pepper; bring to a boil over high heat. Reduce heat; simmer uncovered 12 to 14 minutes or until barley and vegetables are tender. Stir in roast beef; heat through.


Makes 4 servings, about 5-1/2 cups soup.
