Turkey & Cheese Enchiladas

1 (10 ounce) can mild enchilada sauce
1/2 cup salsa
8 ounces Healthy Ones™ Deli Oven Roasted Turkey Breast cut 1/2-inch thick (1 slice from large end or 2 slices from smaller end), cut into cubes (1-1/2 cups)
2 teaspoons ground cumin
1 (8 ounce) package shredded reduced fat Mexican blend or sharp cheddar cheese, divided
1/2 cup chopped cilantro or green onions
8 (6-inch) corn or flour tortillas
Optional toppings: additional chopped cilantro or green onions, reduced fat sour cream, shredded lettuce, diced ripe tomato and/or avocado.


Heat oven to 375oF. Combine enchilada sauce and salsa in a small bowl. Combine turkey and cumin in a medium bowl, tossing to coat. Add 1-1/2 cups of the cheese, 1/4 cup of the salsa mixture and cilantro to turkey mixture; toss again. Spoon 1/4 cup salsa mixture over bottom of an 11 x 7-inch glass baking dish or shallow 2 quart casserole dish.

Spoon about 1/3 cup of the turkey mixture down center of each tortilla. Roll up; place seam side down in dish. Spoon remaining salsa mixture evenly over enchiladas. Cover dish with foil. Bake 20 to 22 minutes or until heated through. Uncover; top with remaining 1/2 cup cheese. Return to oven; bake 5 minutes or until cheese is melted. Serve with toppings as desired.
