Basque-Style Turkey & Vegetable Soup

1 tablespoon olive oil
1/2 cup chopped onion
1/2 cup packaged matchstick-cut carrots or thinly sliced carrots
2 cloves garlic, minced
1 tablespoon flour
1 (14-1/2 ounce) can seasoned or fire roasted diced tomatoes, undrained
1 (14-1/2 ounce) can low salt chicken broth (1-3/4 cups)
1 cup cut (1-inch pieces) fresh green beans
1/3 cup finely chopped salami or pepperoni (1 ounce)
1/2 teaspoon dried thyme leaves
1/2 teaspoon smoked paprika
1/8 teaspoon cayenne pepper or 1/2 teaspoon hot pepper sauce
8 ounces Healthy Ones™ Deli Oven Roasted Turkey Breast cut 1/2-inch thick (1 slice from large end or 2 slices from smaller end), cut into cubes (1-1/2 cups)


Heat oil in a large saucepan over medium heat. Add onion and carrots; cook 3 minutes. Stir in garlic; cook 1 minute. Stir in flour; cook 1 minute. Add tomatoes, broth, green beans, salami, thyme, paprika and cayenne pepper; bring to a boil over high heat. Reduce heat; simmer uncovered 15 to 18 minutes or until vegetables are tender. Stir in turkey; heat through. Ladle into shallow bowls.


Makes 4 serving, about 4-1/2 cups soup.
