Hot & Sour Beef Stew

8 ounces Healthy Ones™ Deli Roast Beef, cut 1/2-inch thick (1 slice), cut into cubes (1-1/2 cups)
2 tablespoons reduced sodium soy sauce
1/4 to 1/2 teaspoon crushed red pepper flakes
2 teaspoons dark sesame oil
1 red bell pepper, diced
1 (4 ounce) package sliced exotic mushrooms or 2 cups sliced crimini or button mushrooms
2 cloves garlic, minced
1 (14-1/2 ounce) can low salt chicken or beef broth (1-3/4 cups)
2 tablespoons rice vinegar or white wine vinegar
1-1/2 tablespoons cornstarch
2 cups thinly sliced bok choy
Chopped cilantro or green onions (optional)


Combine roast beef, soy sauce and pepper flakes in a medium bowl; mix well and set aside. Heat oil in a large saucepan over medium heat. Add red bell pepper, mushrooms and garlic; cook 5 minutes, stirring occasionally. Add broth and vinegar; bring to a boil. Simmer uncovered 8 minutes or until vegetables are tender. Combine cornstarch with 3 tablespoons cold water; mix well. Stir into soup; simmer 2 minutes or until slightly thickened. Stir in bok choy; simmer 5 minutes. Stir in beef mixture; simmer 3 minutes or until heated through. Ladle into shallow bowls; garnish with cilantro or green onions if desired.


Makes 4 servings, about 4-1/2 cups stew.
