Ham and Black-Eyed Pea Salad

6 ounces Healthy Ones™ Honey Ham, sliced 1/2 inch thick
2 cups cooked black-eyed peas (cooked without salt)
1/2 cup thinly sliced celery
1/2 cup chopped seeded tomato
1/2 cup chopped green bell pepper
1/4 cup chopped onion
2 cups cooked long grain rice, cooled (cooked without salt)
1/4 teaspoon ground pepper
1/3 cup reduced-calorie vinaigrette dressing
4 lettuce leaves


Cut ham into 1/2-inch cubes. Combine all ingredients except lettuce leaves in large bowl. Cover and refrigerate salad 2 hours or overnight. Serve on lettuce leaves.
