Bruschetta Chicken Panini

2 slices sourdough or rustic Italian bread
2 teaspoons olive oil
2 thin slices mozzarella cheese
4 slices (2 oz.) Healthy Ones Oven Roasted Chicken Breast
2 thin slices tomato
1 tablespoon chopped fresh basil or 1/2 teaspoon dried


Place bread on a work surface or sheet of waxed paper. Brush oil over bread. Turn bread over and top each with a slice of cheese. Layer chicken breast, tomato and basil over one slice of bread. Close sandwich. Cook in a preheated panini pan or well oiled waffle iron 3 minutes or until golden brown and cheese is melted. (Or, cook in a nonstick skillet 3 minutes per side over medium heat.)


Makes 1 serving.
