Smoked Turkey & Vegetable Sandwiches with Lemon Basil Mayonnaise

Ingredients

1/4 cup light or regular mayonnaise
1/4 cup chopped fresh basil
1 teaspoon grated lemon peel
1/2 teaspoon freshly ground black pepper
4 (4 inch) ciabatta rolls or Kaiser rolls, split
8 ounces sliced Healthy Ones Deli Honey Roasted Turkey
2 cups sliced assorted grilled or roasted vegetables from the deli such as asparagus, red and yellow bell peppers, zucchini and yellow squash
1 cup packed arugula or baby spinach leaves

Directions

Combine mayonnaise, basil, lemon peel and pepper; mix well. Spread mixture over cut sides of rolls. Place vegetables on bottoms of rolls; top with turkey and arugula. Close sandwiches; cut in half.

Sandwiches may be wrapped in plastic wrap and refrigerated up to 4 hours before serving.
